Matcha Chia Pudding

1 teaspoon matcha powder

1/4 cup hot water

1 cup coconut milk or almond milk

3 tablespoons chia seeds

1–2 teaspoons honey or maple syrup (optional)

Instructions
Step 1
Sift the matcha powder into a bowl, then add the hot water. Whisk until completely smooth and frothy.
Step 2
Stir in the coconut or almond milk, mixing until well combined. Sweeten to taste.
Step 3
Add the chia seeds and stir thoroughly to prevent clumping. Let the mixture sit for 5 minutes, then stir again.
Step 3
Cover and refrigerate for at least 1–2 hours (or overnight) until thick and pudding-like. Serve chilled with your favorite toppings.
